How to Make Shahi Roll

Prepare the Shahi Chicken Filling:

  • In a pan, heat butter or ghee and sauté garlic, ginger, and green chilies until fragrant.
  • Add boneless chicken (shredded or cubed) and cook until tender.
  • Mix in yogurt, fresh cream, and cashew or almond paste for richness.
  • Season with red chili powder, black pepper, garam masala, cumin, coriander, and salt to taste.
  • Add a pinch of saffron or cardamom powder for a royal touch.
  • Let the filling simmer until creamy and thick.
  • Mix in finely chopped coriander and a squeeze of lemon juice.
  • Let the filling cool slightly before assembling.

Prepare the Wraps (For Homemade Dough):

  • Make a soft dough using flour, salt, oil, and milk for extra softness.
  • Let it rest for 15–20 minutes, then roll out into thin flatbreads (roti or paratha).
  • Cook lightly on a pan and set aside. (Skip this step if using store-bought wraps.)

Assemble the Rolls:

  • Place the Shahi chicken filling in the center of the wrap.
  • Add shredded lettuce, sliced onions, and a drizzle of garlic mayo or cheese sauce.
  • Sprinkle crushed almonds or cashews for a rich crunch.
  • Roll tightly and wrap in butter paper or foil.

Cook (Optional):

  • Pan-fry with a little butter for a golden, crispy texture.
  • Bake at 180°C (350°F) for 10 minutes for a healthier option.
