How to Make Chimichanga (Mexican Fried Burrito)

Prepare the Chicken Filling:

  • Heat 1 tbsp oil in a pan and sauté garlic and onions until soft.
  • Add shredded or diced boneless chicken and cook until tender.
  • Stir in taco seasoning, cumin, paprika, black pepper, red chili flakes, and salt.
  • Add salsa, chopped tomatoes, and a splash of lime juice for a tangy flavor.
  • Mix in chopped bell peppers, jalapeños, and fresh coriander.
  • Let the filling cool slightly before assembling.

Prepare the Tortilla Wraps:

  • Use flour tortillas or make fresh ones with flour, salt, oil, and water.
  • Roll out into thin rounds and lightly cook on a pan.

Assemble the Chimichangas:

  • Place a portion of the chicken filling in the center of the tortilla.
  • Add grated cheese (cheddar or mozzarella) and a dollop of sour cream.
  • Fold in the sides and roll tightly like a burrito.
  • Seal the edges with a little flour-water paste if needed.

Fry to Perfection:

  • Heat oil in a deep pan and fry the chimichangas until golden brown and crispy.
  • Drain excess oil on paper towels.

(Alternative: Brush with oil and bake at 200°C (400°F) for 15 minutes, flipping halfway.)
